About Us

So it all started some 3 years ago. I love working in the garden and growing exotic fruits and vegetables. i had attempted to grow Carolina Reaper Chilli Peppers with little or no success. However in 2017 i achieved success beyond expectations. Carolina Reaper Chilli Peppers are grown in really hot dry climates and have the title as the worlds hottest chilli. My problem was this, I had grown these beauties but what to do with them. The chilli is too hot to eat alone, too hot for cooking but i needed something that would work and take advantage of their heat.

The answer was chilli jam. I scrolled through the internet looking at recipes and adapted my own. We were running a Thai restuarant at the time so it was perfect to try on customers. I made 2 batches of hot chilli jam using old jam jars and knocked up a couple of labels. I had achieved what i wanted with the chilli peppers and that was that, or so i thought.

A year later i got customers asking for my chilli jam, really i said “yes we are willing to pay for it”. Kerching, time to do a bit more research and to source Reapers. That year I made 50 jars, which sold as fast as i made them. So maybe there is something in this, people love the jam but some say its too hot. So why don’ t i make a range with different colours signifying the different flavours and heats.

We started with green, easily done then that was very mild, made with a white ghost chilli but there was a big gap between the green and the red reaper. I came up with an orange scorpion jam made with scorpion chillies. Not as hot as the red but sitting in the middle nicely. Production has been hectick with a final jam added to the mix, the Triple Carolina Reaper the stupid crazy hot one and the customers loved it.

Now we are making rather a lot and shipping it here there and everywhere. The future is to try more products, so over the next months we will be looking at Chilli shortbread, cooking sauces and maybe chocolate. Muskies ( my nickname at school ) can be added to all your favourite dishes and for burgers and steaks …SPOT ON.

Our Ingredients

I believe in the importance of keeping a recipe simple and not over complicating what could be simple. I therefore looked at the freshest ingredients i could get and home grown being the best. Jam is obviously sweet and therefore a lot of sugar is used in production, however it’s important that it’s a natural ingredient and it basically unrefined sugar.
